Salad with quail eggs and pesto
10 quail eggs2 handfuls of lamb’s lettuce1 handful of radish sprouts1 small red onion1 tablespoon of rocket pesto1 tablespoon lemon juicesaltpepper(recipe for 2-3 portions)Put the quail eggs in boiling water and cook for 3 minutes, peel and cut in half. Wash the lamb’s lettuce in a bowl, add the onion and sprouts cut into feathers. Combine pesto with lemon juice, mix with greens. All season with salt and freshly ground pepper.
